I now use a healthier brand - Pip & Nut and I've found you dont need to make this overnight, ten minutes is probably enough time to soak the oats.

Do the boffins know whether it’s because UPF is generally high in salt/sugar/sh*t that it’s linked to bad health outcomes?

It seems to be both, but the focus is now more on the latter as well already knew that high sugar content and some trans fats were bad for us.
For example, wholewheat flour keeps a lot of the fibre from the wheat, whilst plain flour is basically devoid of any nutrients. There's an interesting theory that the prevalence of the specific wheat crop (dwarf wheat) created during the green revolution after the war that is ultra drought and disease resistant , and extremely calorie dense, but basically has zero nutritional value, is responsible for a lot of the worlds farming and dietary issues.

The same nutritional scientists report, that there is little merit in fresh vegetables over the frozen versions. Vitamin C is easily oxidised and lost. This starts to take place, the minute vegetables are cropped. " Fresh " vegetables ( especially the ones from Abroad, a substantial amount ) take several days to get from farmer to supermarket. Frozen stuff get frozen within a few hours of being cropped, thus preserving the vitamin C. So, I think a lot of the problems derive very much from precisely what you eat & the calories within.
