Lovely stuff is the mozzeralla, fresh creamy buffalo mozz, in a salad with nectarine, pine nuts and basil leaves with a little light dressing is gorgeous. For pizza, I actually prefer the dryer shredded or pearled stuff - I find it melts better and doesn't "weep" into the base (although it's still lovely, if a little sloppy, to use fresh in a zzza)
