Used to love doing chorizo omelettes. Cook the chorizo first then do the eggs in the red chorizo oil. Lush.

I reckon eggs is the thing I miss most now I'm not complicit in the murdering of animals.

Onion, only slightly softened so it has plenty of bite, ham and cheese. A little bit of dried oregano/thyme. Probably should be some fresh herbs, but I see omelettes as a bit of store cupboard dish.

Unlike Joe though, I could easily survive without ever harming an egg again my life.

Spring onion and mushrooms lightly fried in a little oil and butter, then add some ham and cheddar cheese and immediately add eggs (with a little milk added to the mix).

Yeah but the mummy chickens get raped and stuff and forced to have so many eggs they get right messed up.

New potatoes, par boiled and then sauted for a while without gaining too much colour. Then add some finely sliced shallots to the pan and saute the whole lot till the shallots soften. Pour into the beaten and seasoned eggs and leave for a minute or so before returning to the frying pan and cooking over a medium heat. As the top starts to firm up, use a plate or board to help turn it over in the pan for a while.

Bland. Going for chorizo and cheese, maybe some spinach too.

Chorizo, cheese, mushroom and a couple of spoonfuls of sundried tomato paste in there before folding it is quite nice
