One thing ive done before is cook the duck on top rack, have your potatoes below which will be covered with fat dripping from the duck.
I've done this no tray thing when making young Jamie's Empire chicken. Delicious. Anyways, trad Turkey, Ham and trimmings again for us. No outdated religious dietary restrictions in our household. Seafood starters too. Though I only eat a little meat at Xmas dinner, preferring to scoff everything else. Enjoy Boxing Day coldcuts and leftovers curry etc.
