Goose, bought from Blackwells near Coggeshall. Goose fat for spuds for the coming year for 'free'.

I'm cooking a beef Nelson (it's exactly the same as a Wellington, except the chef is all at sea). Pairing that with Dauphinoise spuds, purple sprouting, a port wine reduction, and a 2005 claret.
