Double wrongness, Stocky! Haven't had a pickled herring for yonks, but now you've mentioned it I fancy getting some.

Anyways, trad Turkey, Ham and trimmings again for us. No outdated religious dietary restrictions in our household. Seafood starters too. Though I only eat a little meat at Xmas dinner, preferring to scoff everything else. Enjoy Boxing Day coldcuts and leftovers curry etc.

One thing ive done before is cook the duck on top rack, have your potatoes below which will be covered with fat dripping from the duck.
As in a duck literally on the rack?
Yes, no tray. I think it was a Jamie tip and Ive only cooked duck once so...
It sound delicious but I’m not f*cking cleaning the oven after that

I've done this no tray thing when making young Jamie's Empire chicken. Delicious. However, duck is a lot fattier so I sense so care may be required.

Only the rack gets dirty. Shove it in the dishwasher.

Awful stuff, I’ll faint a stomach upset rather than eat that but gotta go with the locals.
